Áine's Homemade Lamb Stew

Equipment

  • 1 knife
  • 1 chopping board
  • 1 bowl
  • 1 large saucepan

Ingredients
  

  • 1lb diced  lamb
  • 3 large carrots
  • 1 small parsnip
  • 1 large onion
  • 8 potatoes
  • 1 beef cube (Knorr)
  • 1 packet Schwartz Lamb casserole 
  • Fresh Basil
  • Bayleaf
  • Parsley
  • Salt
  • Black pepper
  • Bones (for flavour)
  • 3 pints Water
  • 1 White pepper

Instructions
 

  • Mix packet of Schwarz lamb casserole one hour in advance
  • Chop the parsnips
  • Chop the carrots
  • Chop the onions
  • Rinse the chopped vegetables (parsnips, carrots and onions)
  • Add ingredients to a large saucepan
  • Add black pepper
  • Add white pepper
  • Add stock cube
  • Sprinkle salt over ingredients
  • Add lamb casserole mix (prepared earlier)
  • Add boiling water to saucepan and place on the hob
  • Stir and bring to the boil
  • Peel more potatoes and add to the pot for texture
  • Add herbs to taste - parsley, bay leaves and fresh basil

Notes

This recipe feeds a family of four for two days. It's a recipe our Mom used to make and it smells delicious.
